Eggs stored in crocks November 2008
The hens started laying in late September. We weren't getting very many eggs, between 6-9 a day. So I started saving them to store over the winter, as hens usually stop laying much by December. I estimated I'd need about 23 dozen to keep us going until mid March.
I found a source of waterglass, tested all the eggs and put unwashed eggs in, the newest ones first, oldest on top. The oldest eggs in the small 3 gallon crock.
But the hens never did stop laying, all winter. I started trying to sell eggs just before Christmas and by March was selling all I had.
We've just dipped into the crocks, in March, and so far, all the oldest eggs have been fine.
