4 eggs
1 tsp. salt
½ tsp. pepper
1 large bunch kale, washed and chopped
16 oz. cottage cheese
1 small onion, chopped
5 garlic cloves, minced
1 cup packed grated sharp cheddar cheese
¼ cup flour
1 tbsp. basil
1 pkg. sausage links

Preheat oven to 350F. Butter an 8” x 8” x 2” glass baking dish. In a large bowl, beat eggs, salt, and pepper. Mix in kale. Add remaining ingredients and stir until well blended. Transfer mixture to prepared dish. Bake casserole until center is firm and top is golden, about 45 mins. Let cool slightly before serving.

Makes 8 to 10 servings
